Damper Recipe



Damper is a traditional Australian soda bread, the basic ingredients of this dish are made from wheat flour and sugar, how to cook it using charcoal in front of a bonfire. The shampoo is very unique, because in cooking it by burying the bread mixture in the ashes of the charcoal from the bonfire for about 30 minutes. This damper will never be dirty, even though the cooking method is buried, because the damper bread mixture will harden on the outside. If after cooking the damper can be cleaned first, then ready to eat with additional syrup or sauce.

Ingredients :


  • 250 g of self-raising flour
  • 1/2 tsp salt
  • 25 g of unsalted butter chilled cubed
  • 175 ml milk


Equipment :


  • 1 baking tray
  • 1 bowl
  • 1 knife
  • 1 pastry brush




  How to make:

1 Mix the flour with the salt in a large bowl. Add the butter and rub it into the flour with the tips of your fingers, until it resembles fine crumbs.

2 Stir in the milk with a round blade knife (butter knife) to make a soft but not sticky dough.

3 Turn out onto a lightly floured work surface and shape into a soft, smooth ball.

4 Set the ball of dough onto a tray or baking sheet and flatten to make a round about 17 cm across.

5. Cut a deep cross in the dough and brush lightly with milk.

6. Bake at 190C for 30 minutes until golden.

7. Serve warm or at room temperature.
