How To Make Breton Butter Cake

This Breton butter cake is a classic dessert in Brittany. Kouign Amann means "bread and butter," and if bread is a staff of life, then this particular bread does indeed lilies! Rich in butter and sugar, this cake does not require any decoration, although berries or whipped cream make for special treatments.
Ingredients :
- 1 ounce of yeast
- 1 teaspoon of sugar
- 1 1/4 cup of sugar
- 3/4 cup of water
- 4 cups of flour
- 1 cup of butter
- 1 egg yolk
How to make :
1. Sprinkle yeast and 1 teaspoon of sugar on warm water and let the yeast dissolve for 5 minutes. Stir the flour into the yeast mixture until the mixture is smooth and thick.
2. On a lightly ground surface, roll and stir the mixture into a large rectangle, about 9 inches 13 inches. Dot the surface with 1/4 cup of cold butter and sprinkle with 1/4 cup of sugar. Fold the mixture until smooth.
3. Repeat the rolling and folding process again, three times.
4. Preheat the oven to 350F. After the dough is folded to the last place, put it in a round 9-inch pan. Brush the surface of the mixture with egg yolks, sprinkle with the remaining 1/4 cup of granulated sugar, and bake for 25 to 30 minutes, until it turns golden brown.
5. Let the butter cake cool in the pan for 10 minutes, run a spatula or a thin knife around the edge of the cake, and remove the cake from the pan. Serve warm cakes with berries or cream.
